Irresistible Peanut Butter Chocolate Chip Cookies: A Perfect Blend of Creamy and Crunchy

Ingredients:
- 2 1/2 cups (300g) all-purpose flour
- 1 tsp baking powder
- 1 cup (225g) butter, salted or unsalted
- 1 cup (250g) peanut butter, smooth or chunky
- 1 cup (200g) light brown sugar
- 1/2 cup (100g) white sugar
- 1 cup (180g) chocolate chips or chopped plain chocolate
- 2 eggs
- 2 tsp vanilla extract
Instructions:
- In a medium bowl, sift together the flour, baking powder, and salt (if using unsalted butter). Set aside.
- In a large mixing bowl, beat together the butter, peanut butter, and both sugars until light and creamy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and beat again.
- Gradually add the flour mixture to the mixing bowl and stir until well combined. Then add the chocolate chips and mix until evenly distributed.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour or up to 3 hours.
- Preheat the oven to 180°C.
- Roll the chilled dough into balls about 1 inch in size and place them on a baking sheet, leaving enough space between each cookie. Use a lightly floured fork or potato masher to flatten each ball in a criss-cross pattern.
- Bake the cookies for about 10 minutes or until they start to brown around the edges. Do not over-bake as they will become crispy as they cool.
- Remove the cookies from the oven and transfer them to a wire rack to cool completely.
- Store the cookies in an airtight container to keep them crispy.
